1/4 cup melted butter
6 eggs
1 cup buttermilk baking mix
1 cup milk
1 lb. Monterrey Jack Cheese
2 packages frozen chopped spinach, defrosted
Beat eggs, then add remaining ingredients, blending well. Pour mixture into greased baking dish. Bake in preheated 350 degree oven for 20-30 minutes, until golden brown. Serve with your favorite salsa.
